If you edit the signature path directory, could you check if `journalctl
-f` lists apparmor denial errors when trying to write an email?

I would guess that the path is blocked by the snap sandboxing. If you
use the fileselector then it goes through xdg portal which gives the
other location but mention, but indeed that's a local path generated by
the portal and not going to work on another machine (and probably not on
the same after restarting either...)
