Did you add the override file to correct location (/etc/apt/preferences.d/)? Don't forget to run 'apt clean' and 'apt update' changing configuration. Also check your apt-cache policy, post outputs of 'apt-cache policy gparted gparted-common' and 'apt install gparted' and also contents of any file in /etc/apt/preferences.d if error persists.
