Deleting the *.ev-summary files didn't resolve the problem for me---in fact before it would just throw up the error message every time it tried to fetch new mail, and after deleting the files it would crash immediately after opening the main window (possibly when it went out to the server to get new mail).
I then tried to run it under strace: strace -f evolution and it started w/o crashing. Perhaps strace with its syscall printouts slows it down enough to avoid the race that trips it up in the first place.
