If not specified an empty template will be used - so that was not
making a difference

TBH - I never had/tried/used "mouse" in grub or UEFI, I'm just a
keyboard guy I guess.
If you tell me how to initialize a mouse there I can try :-)

It only matters if you have your mouse working, but then issues with
the multitude of mouse-inputs.
E.g. one from the Host via Desktop-integration that comes through
spice - and another one via the USB Passthrough.
Due to that if you use GPU passthrough (and no other virtual display)
the channel through spice won't exists and therefore no conflicting
inputs will happen.
