A very easy 75% solution would be to make the partitioner simply look for multiple hard disk drives (or partitions with with type = 0xFD), and if they are seen then display a warning message:
*** Warning: This installer cannot install Ubuntu on a RAID partition. If you wish to install to a RAID partition (such as RAID1/mirrored), please shutdown/restart, and then at the boot-up menu select either "Text-mode install" or "Install Ubuntu server." Obviously it would be better to fix it. But telling users how to work around the problem would be very simple to implement, and it would change the extreme frustration that this problem causes into a minor annoyance.
