Same problem here, I think. I'm working on a 500 page LaTeX document which compiles to a 25mb pdf.
If I scroll too much, evince just eats up ALL of my 1gb of memory AND my 1.2gb of swap. It actually looks like it keeps eating memory for a while even after I stop scrolling. Sometimes I catch it just before it's eaten all my memory (I have the system monitor applets in my panel) and am able to press Ctrl+Alt+Backspace, which after a few more minutes of swapping kills my GUI and gets me a useable window manager again.
