I have a similar set up and issue. I've plugged in my headphones and the "dongle" into my headhpone and mic jacks on my sound blaster Z. No sound when I first install Kubuntu. I default to using headphones.
I disabled the onboard creative audio in the BIOS when I first purchased the system with the sound blaster Z. The onboard audio does not show up in Kubuntu (expected). The Nvidia HDMI sound ports are both seen and take priority. I cannot change the priority order in the volume control gui. Also, there are no other mixer options except for a very basic slider in the volume control gui (Pulse Audio). If I run the alsamixer app from the command line and unmute the headphones I can head sound. In order to save my configs I have to use the alsactl store command. All of this is an inconvenience and not the end of the world.
