Thanks. I additionally had to edit /etc/mysql/mysql.conf.d/mysqld.cnf and adjust "bind-address".
Unfortunately I couldn't reproduce the crash. I do however get a hang after it prints the variables and says "Done". You might try adding debug symbol packages (follow https://wiki.ubuntu.com/Debug%20Symbol%20Packages and install mysql- server-core-5.7-dbgsym) to get a more useful core dump. Unfortunately I think I've now spent more time on this than warranted, so I'll have to leave you to see if you can isolate the problem further. If it does turn out to be a bug in Ubuntu, please explain and set the bug status back to New.
