I did a memory test with memtest86 that ran around 5h through the night and it passed 48/48 tests with 0 defective bits.
I'm now on 4.19.1-041901-generic and didn't have a crash since my last post! (Although it did crash on 4.19 as I mentioned on 2018-11-12). My workflow didn't change at all: I still connect my laptop to an external monitor via Thunderbolt and have it attached to the power outlet at the same time. Suspending the laptop over the course of several days I got uptimes of at least 6 days.
