When I install Ubuntu without selecting anything until the installer
propose me to choose a keyboard, I select French and then it's the wrong
french keyboard that is proposed by default : "Français - Français
(variante obsolète)" instead of "Français - Français (variante)".

Interesting... I think you may have found the difference there.

I HAVE to choose the initial locale, otherwise, it just sits there.
However, here's what happens:

I chose the default at that very first locale selection, which is English.
Then I chose "Install" as before (not the Try Ubuntu first option).
THIS TIME, when the keyboard selection comes up, it does indeed choose the 
Variante Obselete keyboard, not the Variante version.

So it appears that, in your case, for whatever reason you're getting
that first choice automatically, and that's causing the issue down the
road when you get to keyboard selection.

So to summarize:

Choose English at the boot screen on the ISO, and French as the locale once the 
installer loads, and you get the Francais (variante obselete) keyboard as the 
default choice.
Choose French at the boot screen on the ISO, and French as the locale once the 
installer loads, and you get the Francais (variante) keyboard as the default 
Choice

So this is still an active issue then in the installer.  As I mentioned
earlier, you should file a bug against ubiquity with all the info from
this.
