By starting gscan2pdf with the --log=log option, it creates a file called "log" in the current directory.
gscan2pdf --log=gscan2pdf.log would create a file called "gscan2pdf.log". Instead of copy-pasting the output from the terminal, please attach the file. If setting # pages to 1 works for you, give it a go.
