Now that openjdk-11 has arrived in Debian unstable, I can confirm the
problems.

I doubt that. For me the following works:

JAVA_HOME=/usr/lib/jvm/java-8-openjdk-amd64/ jabref

If it doesn't please provide the output of

DEBUG_WRAPPER=1 JAVA_HOME=/usr/lib/jvm/java-8-openjdk-amd64/ jabref
--debug
