Do you really mean you are hand-crafting /etc/fstab, or do you mean
partitioning?
Furthermore, it looks like your system is booting in UEFI mode (you see
a grub menu when you start the live CD rather than a purple background
and images). In this case, you also need to create a separate EFI
partition, which should be a FAT partition that will need to get mounted
to /boot/efi.
