I'm using real installs, not virtual. I suppose you are talking about the vanilla-gnome-desktop package, then, i.e. a meta package whose purpose is to install GNOME packages. The login options are provided by the gnome-session package, and the options are:
GNOME GNOME on Xorg I had gnome-session installed already, chose the GNOME option (which means GNOME on Wayland), and could still successfully change the mouse behavior via g-c-c.
