Does '--source' not fulfil the requirement of the PPA, does it also require a binary package?
I am not too keen on '--include-orig', it suggests we would add a corresponding flag for each of the dpkg-buildpackage arguments. Philipp for the builder you can override it once on the command line with '--builder', however I realise this isn't optimal. Another approach would be '--builder-args' which just extends the builder arguments with those that you supply, so that you can add '-sa' in this case, and also '-v0.2' or whatever else you want, without having to type the full builder out.
