OK. So it's definitely an alsa bug. I recompiled the latest alsa (1.0.15) following https://help.ubuntu.com/community/HdaIntelSoundHowto (just substitute 15 to 14 in the version number used there), and sound works perfetly : from speakers when no headphone plugged, from headphones when plugged.
