The problem is the following:

OpenOffice.org saves all PPD option settings of the printer(s) in the
document when you save your document after having printed it. And it
saves really all options, not only the ones you have changed. So if you
change a default on your CUPS server afterwards (Installed
Options/Duplex Unit: Not Installed -> Installed) this will not have any
influence when you continue working on your OOo document. You must go
onto the "Device" tab of the "Properties" dialog in OOo and change the
"Duplex Unit" option there, too. Then you can click the "Paper" tab to
choose double-sided printing.

Proposed fix:

This has to be done upstream, as it is an OpenOffice.org problem and
this appears the same way in every distribution.

The printing dialog of OOo should not display and save any option in the
group "Installed Options" (or "Options Installed") of the PPD file. It
should always take the server default of these options, as these options
are set by the system admin on the CUPS server according to the
printer's hardware configuration.

In addition, the dialog should (if possible) keep track which options
the user has actively changed and only save these ones. So changes of
the defaults on the server will be respected.
