What I don't understand is the line with the long UUID for /boot/efi:

  #UUID=b032ab5d-1a06-4b52-afcb-14954b4b6ab8 /boot/efi /dev/sda1:
PARTLABEL= defaults 0 1

this would suggest that at some point the EFI partition  was formatted some 
ext* or other Linux fs instead of the normal VFAT (for
which a commented out entry also exists). How did you install this system, in 
particular which partitioning option did you chose? If you did manual 
partitioning, what exactly did you do? Is it possible that you changed the EFI 
partition manually?

Can you please run "sudo blkid" and paste the output here?
