you can update the description on this bug if you want. Some things which are not clear, you said that you tried to open an xcf with eog but not how, using nautilus right click option? Does it happen with an xcf and every time? Opening an image should not change the default, that would be a different issue. You can change the default association from the properties dialog, does setting gimp there work correctly?
