You shouldn't be getting that bios compatibility warning unless you have a disk with partitions on it, none of which are an ESP. Do you have a second disk configured in the vm that you aren't installing to? Are you sure you clicked continue at that warning, because that should make it pick grub-efi, and cancel is to pick grub-pc.
