Confirmed, the bug is slightly tricky. Nautilus display a warning when the filename and detected type don't match and they are not opened by the same application. Changing the matlab default creates a dismatch between text/x-objcsrc which still use gedit and text/x-matlab. A workaround would be to add text/x-objcsrc to the gvim.desktop MimeType
