Just because the conversation is encrypted end to end doesnt mean you cant log locally. Dont know how empathy does this, but in pidgin it can be set up easily. There is even an option to omiss the conversations that are encrypted.
I dont really like that distinction, because it implies all encrypted communication is sensitive.
