Just to follow up with this .... I also tried entering in the Host URL and OAB URL generated from trying this as the 'root' user. The account will create, but when you try to 'check mail', evolution gets stuck in this endless loop of asking for your Exchange password. So I strongly suspect it's something going on between evolution and gnome-keyring -- like for some reason evolution- ews can't create a keyring, or open a keyring.
