Some broken package dependency somewhere has caused the ubuntu-desktop metapackage to be removed. Try explcitly reinstalling that package: either the broken dependency will become obvious or it was a transient problem and your fully-functioning desktop will be restored.
Unfortunately, the ubuntu-desktop metapackage has a large list of dependencies, and broken dependencies are transitive so it is pointless to speculate about which dependency actually resulted in ubuntu-desktop getting removed.
