Well, I am now magically fixed.

I appear to have had some Bad Packages from some prior mucking around
with the ATI driver. I uninstalled xserver-xorg-core (!) and then re-
installed the stock ubuntu packages and now auto-hide plays nicely with
my dual monitors.

For reference, I appeared to have had:
xserver-xorg-video-ati:amd64 (7.1.0-makson1~raring2)

instead of:
xserver-xorg-video-ati:amd64  (7.2.0-0ubuntu10)

Hopefully this fixes all of the other issues I've been seeing (random X
crashes, screen corruption).
