Running chromium-browser --debug in a Terminal will cause chromium- browser to run in a GDB instance, but I'm not sure how much that will help if a kernel panic occurs.
Cookie info shouldn't appear in the debug info, since GDB tries to get the calling methods and the line numbers of the source code files. Note that (assuming you are able to get something) to get a decent stacktrace, you'll need to install the debug packages as well.
