@Micah F (fitchmicah) the issue with GNOME is probably that bug: https://bugzilla.gnome.org/show_bug.cgi?id=697192 -- GNOME 3, the "touch optimized" UI doesn't work with touch screens. I'm on Arch Linux + KDE (because of the said GNOME bug) now, everything works as expected.
