I was able to get past the NoClassDefFoundError by creating a link with
capitalization to match the manifest:

brad@oscar:~$ cd /usr/share/java
brad@oscar:/usr/share/java$ ln -s itext-2.1.7.jar iText-2.1.7.jar

Unfortunately, this results in no GUI being displayed.  It simply hangs
with no GUI and uses quite a bit of CPU.  I am attaching my verbose
output, including output after ctrl-c.

Any help getting this working is appreciated!
