The logs indicate that jtex.ini can't be found. It may be missing or
just somehow corrupted.

One thing you could try is to reinstall the package jtex-base which provides 
jtex.ini. To do that, run following commands in terminal:
  sudo apt-get install --reinstall jtex-base
  sudo dpkg --configure texlive-binaries

If that doesn't help, then I'm out of ideas...
