I created a ~/.pulse/client.conf with

autospawn = no

in it, then killed pulseaudio and checked that it wasn't running with
ps.

As you proposed in

I use

arecord --vumeter=stereo -f CD -Dhw:0,0 foo.wav

and see input activity on the right channel, which seems to correspond
to the built-in microphone.
