I at least sort of figured out my problem. It looks like I only want to use indicator-multiload with Unity, and want to use the corresponding applet (maybe) with XMonad. I appear to be able to add it with alt- right-click in the panel area, and it uses up plenty of space. indicator-multiload should probably work better too, but this is good enough for me.
