After I tried printing using Windows on VirtualBox the printer is working again on Linux, even without replacing the cartridge. So I'm not able to reproduce the problem any more in order to capture the logs.
Not sure why, but maybe there is a flag the needs to be set on the printer after it detects a low ink cartridge? Anyway, I will keep an eye, and if it happens again I will capture the logs.
