For clarity about the bug: Evolution always prints in A4 despite what is in /etc/cups/ppd/ or /etc/papersize. I believe it may have to do with the cairo rendering engine as I also found this bug https://bugs.freedesktop.org/show_bug.cgi?id=4258.
