I've been running RabbitMQ 2.6.1 and 2.7.0 for a while on 11.10 (and 11.04) without any of these problems.
I'm not sure what is different in my setup compared to yours, but maybe we can work it out? I am running with lightdm, not gdm. NetworkManager is enabled, but the ethernet is managed via /etc/network/interfaces instead. (eth0 is bound to a bridge, br0, which then uses DHCP to obtain an IP.
