Sorry for the delay, I decided to figure out how to do it with pbuilder while I was at it. (Note for posterity: add 'export DEB_BUILD_OPTIONS="debug nostrip noopt"' to ~/.pbuilderrc and ignore the similar-sounding DEBBUILDOPTS which is unrelated.)
