Deleting messages in IMAP is a two-step process; first the message is marked to be deleted, then a whole folders' "mark for deletion" messages will be removed in an operation called "expunge". Normally we should see traces of what's going on in .xsession-errors.
Could you please re-open evolution from a Terminal window, using the follow command so we can try to find out what went wrong?
