I don't experience this problem in the Ubuntu 11.04 nor Kubuntu 11.04 live CDs, but in openSuSE 11.4. The problem may be the same as bug #653709, #538000 and #218906. JoePub's workaround/solution, comment #3 of bug #218906, works fine for me (although on openSuSE 11.4 the files are named differently, I targeted /etc/modprobe.d/50-sound.conf).
On my motherboard (sold as GA-G31M-ES2L and identifying itself as GA- EP45-DS5 with a 82801G (ICH 7 Family) HD audio controller). in Ubuntu 11.04 and Fedora 15, the CD channel is accessible without module options, though the volume is zero by default and you need to to dig up the control because the default "sound card" is PulseAudio.
