@Wesley: you can get an overview of a given package at https://launchpad.net/ubuntu/+source/<packageName>, for example: https://launchpad.net/ubuntu/+source/gnome-control-center. From there, click on the "Code" section to get a list of branches and the series they are related to. Regarding mentoring, you can probably find help on this kind of questions on #ubuntu-devel on IRC (freenode).
