I managed to fix this with the Ubuntu 10.10 Alternative (noted the same on Server CD) disk. Creating a 1mb partition at the beginning of both my 2TB drives and setting it to 'reserved bios partition' was what I needed.
Ubuntu creates this partition for you auto-magically when you use the guided partitioning tool.
