I have discovered the problem as to why these kernels won't add. update- grub won't add Ubuntu kernels to the menu.lst when running on an upstream kernel. If I manually add the kernel to the list, boot into it, and run update-grub on an Ubuntu kernel, each image adds to the list fine using update-grub. This Xen/non-Xen stuff is weird because I built the upstream kernel using the .config file from Ubuntu's 2.6.35-23 kernel.
