For most Ubuntu apps which are Gnome-based projects the "Undo" and "Redo" shortcuts are Ctrl+z and Ctrl+Shift+z respectively. OpenOffice does not follow this schema. It uses Ctrl+y instead of Ctrl+Shift+z instead.
