This is an old bug: gnome-cups-manager has been replaced by system-config-printer since Ubuntu 8.04, therefore we are closing this bug as invalid. Furthermore the gtk printing dialog has changed since the time you reported this bug. I tested with shared printers on Ubuntu 10.04.1 LTS and Ubuntu 10.10 and I'm able to change the print options from gtk printing dialog in evince or gedit. Therefore I would suggest to upgrade to Ubuntu 10.04.1 LTS or higher, if you still have problems after that feel free to reopen and don't hesitate to submit bug reports in the future. To reopen the bug report you can click on the current status, under the Status column, and change the Status back to "New". Thanks again!
