NM already traps the important messages from pptp in order to give out feedback to the user (or know that a password was asked for again). Otherwise, it is possible to restart NM with the PPTP_DEBUG=1 environment variable in order to have it write debug information to a log, so I'm not sure what else would be required.
If you have reason to believe additional information should be available in NM's logs, please don't hesitate to bring this up on the NetworkManager mailing list (http://mail.gnome.org/mailman/listinfo /networkmanager-list) for further discussion.
