partman doesn't offer the ability to create extended partitions
explicitly.  Instead, they're implicit; just create logical partitions
where you want them, and an extended partition will be created to
contain them as necessary.

There has been the occasional use case for creating extended partitions
explicitly, but they're sufficiently rare corner cases that I think it's
unlikely we will be complicating the UI further to offer this.
