Hello, I have this bug too, I have 10.04 netbook. My email hoster is the german "Strato AG" and I use IMAP there as well. Today I had two new messages in my inbox, I read them both and now it still says "inbox (1)". By now it just says "inbox", so I guess this is just a synchronisation delay between evolution and the imap server.
