Are you sure that there is no menu item? It just uses the debian menu system to install one under the section Applications/Emulators. Additional it uses freedesktop .desktop system to install a desktop file under /usr/share/applications/mupen64plus.desktop Both appear under debian (kde). I am currently downloading ubuntu 10.4 to test it. Can you please add information what desktop environment you are using and if you are member of the games group (/etc/groups). And please never forget to add exact information what version of mupen64plus version you are using and from which repository you got it.
