Installing evolution-data-server 2.28.3.1-0ubuntu5 from lucid-proposed seems to solve my crash problems.
Before I could reduce the crash frequency by only having one or two mail accounts active. After installing evolution-data-server 2.28.3.1-0ubuntu5 I've run Evolution 15 hours by now with five accounts active searching for new messages each and every minute with no crashes so far.
