@Steve Langasek: Just to update: I tried changing the fstab lines to defaults:
192.168.0.1:/home /home nfs defaults 0 1 reverting the gdm.conf to remove the check for /home being mounted, and rebooting. This time the machine came up fine. Not sure if it'll do that reliably, but it looks promising.
