I can confirm this. I have tried to change default video player - right
click on video file - Open with another application (or something like
this, I don't have English version of Gnome), I have checked "Remember
this application ...", but Nautilus remember nothing.

Only way to change files association is: Right click on file -
Properties (at bottom of local menu) and Open with (choose right
application). This is very boring bug...
