You still can tweak the session for erasing your GNOME one. If you have a technical solution to get the GNOME and UNE session without the locked panel (locked panel will happened in GNOME3 BTW with gnome shell), you're welcome. Even GNOME upstream in charge of the panel don't find a technically interesting option after chatting with them.
